Erik Van Der Lee is a vegan professional fighter. He has trained under James Wilks, a former UFC fighter that is also doing incredible work in the plant-based world. But after signing up for a free week in James’s gym a few years ago, he quickly learned that this type of training was his passion. Shortly into his training, Erik started implementing a plant-based diet, and it has completely transformed his health and athletic performance.
